With all of the Mission Tortilla coupons that have been out recently, I have been pretty stocked up on tortillas. We have been making some very budget friendly recipes. I was able to pick up all three sizes of Mission Tortillas (6,8 and 10inch) for under $1.25 each. This made it really easy to but together budget friendly meals. My favorite was BBQ Chicken Fajitas. Not to mention, these fajitas are healthy – no trans-fat or cholesterol in the tortillas and you can’t go wrong with a plate full of veggies!
I thought I would share this simple, cheap recipe with you. Using the tortilla as a base for the meal, makes it so easy – and their are so many options.
1.5lbs of boneless chicken thighs (I paid $1.50)
2 Large Red Peppers
1 Red Onion
1 Package of 10 inch Mission Tortillas
Shredded Lettuce
1 12 oz or larger Bottle of BBQ Sauce ( I used free Sweet Baby Rays)
(optional: Top with shredded cheese, sour cream)
1. Put Chicken in Crockpot with full bottle of BBQ Sauce. Let cook on low for 6-8 hours. Stir throughout the day.
2. Saute Red Pepper and onion (you can use a cooking spray to keep them from sticking).
3. Heat frying pan and lightly coat with cooking spray. Place tortillas in pan to lightly cook on both sides. (if you prefer a more soft tortilla, place them in aluminum foil in the oven to heat them)
4. Remove chicken from crock pot. Shred with a fork.
5. Add chicken, onions, peppers and lettuce to the heated tortilla. Top as desired.

Shredded Chicken Burritos
Serves: 4
4 Boneless Chicken breast halves
1 Packet taco seasoning.
3/4 cup water
8 oz or half a can of petite diced tomatoes with green chilies*, drained
8 Mission Flour tortillas
Cheddar cheese
Lettuce, sliced into thin strips
Bell pepper, diced
Onion, diced
Taco sauce or salsa
Boil chicken, covered for 90 minutes. Drain out the water and shred the chicken with two forks. Add seasoning and water and stir until thickened over low heat. Stir in tomatoes. Put about 3 tablespoons of the chicken on a tortilla, top with cheese, lettuce, pepper, onion and taco sauce. Roll up and serve.
